#29 - Keto Spinach Artichoke Parmesan Chicken
Oh my word you guys....this chicken was delicious. I think if I had made some keto chips to go with it, it would have been the only thing that would've kicked it up a notch. I assure you, it will be delicious by itself!! Also, I will always apologize for my food photos. I need to learn the art of food pictures lol!
Ingredients
10oz package of fresh spinach
5 tbsp mayo
2 tbsp sour cream
1 6oz jar marinated artichoke hearts
1 1/3 cup mozzarella
6 oz cream cheese (room temp)
2 tbsp garlic
5 chicken breasts
salt & pepper to taste
Directions
1. Preheat oven to 400 degrees.
2. Cook frozen chicken for 40 minutes or until cooked through.
3. Saute the raw spinach until wilted in a tbsp of olive oil & 1 heaping tbsp of minced garlic.
4. In a separate bowl, mix all other ingredients. Combine well.
5. Once chicken is cooked through, remove from oven & cut up into chunks.
6. Pour spinach cheese mixture overtop.
7. Cook for another 20 minutes.
8. Remove from oven & put a mixture of 1/2 cup mozzarella & 1/2 cup parmesan over top.
9. Put back into the oven on broil & cook until cheese starts to brown & is bubbling.
Makes 8 servings
Net carbs = 4 per serving
