#27 - Keto Hot Pockets

This is for the days when you really want a "comfort food" item and you have a fair amount of net carbs left in your day. I made these for Nick and myself last night & he loved them. He did say that he prefers the "buttery flakiness" of a real hot pocket, but I think if you wanted to brush butter across the tops, you might get more of that "feel".

I found them to be exactly what I wanted. You can leave the tomato sauce out for less carbs and you can freeze these to eat throughout the week.



Keto Pepperoni Hot Pockets

Ingredients: yields 8 individual servings

30 slices Turkey Pepperoni (this is what I used, you can use regular pepperoni for more fat content)
5 cups Mozzarella Cheese (4.5 cups for crust. .5 cup to divide for filling)
2 cups Almond Flour  
12 tbsp Tomato Sauce (2 tbsp per hot pocket)

Directions:
1. Preheat oven to 400 degrees.
2. Mix almond flour and melted mozzarella cheese.
3. Roll out between 2 sheets of wax paper or parchment paper.
4. Divide dough into 24 equal squares.
5. Divide ingredients onto 12 of the squares
      - 5 pepperoni per hot pocket
      - sprinkle of mozzarella from remaining 1/2 cup
      - 2 tbsp tomato sauce
6. Place the other 12 squares (1 on top of each).
7. Pinch together edges with fingers or a fork.
8. Bake for 15 minutes.
Enjoy

12 net carbs per hot pocket
3g sugar per hot pocket
