#9 - What I Ate Today ... An Example

This post is for those of you who have asked me to do a "day in the life", etc. I have to be honest and say that I really don't think I m all that cool to be doing a day in the life post so I'm not going to give you every detail of my entire day, but I'll do my best to give you the info you need/want.

I woke up a little later than normal today so I didn't worry with making myself food. Instead, I made myself a "shake" (let's be honest...I loathe shakes and have never found one I like, so...I do my own thing). I used a normal sized shaker bottle (20-32oz...I don't know the exact ounces so we'll just say normal sized), mixed 4oz grapefruit juice, 1 packet pink lemonade crystal light (individual serving), 1/2 scoop protein powder, filled with water and shook. This is my go-to when I'm not hungry, feeling sick, don't have time, etc. It gives me a boost of protein without a ton of carbs or without having to actually eat something. If I want zero carbs, I leave out the juice. It just so happened that I wanted the grapefruit flavor this morning. 100% of the carbs of this meal were from the grapefruit juice. This is also when I take my vitamins. And no, I don't log those. Below is a screenshot from MyFitnessPal where I logged.


After I made my "shake" (trust me, I get that it isn't really a shake), I tidy the house and then work on getting Zion and I ready for whatever is ahead of us for the day. I tend to take Monday's really slow because typically people hate them and I always want to look forward to our Monday's. Shower for me, bath for Zion, getting ready, etc. is a long process for us on Monday's and I wouldn't have it any other way. By the time Zion is finished playing in the bathtub and actually got his hair washed (his absolute least favorite thing in the world), it's time for lunch.

Today, our lives were thrown a bit off because I found Zion's fish (Marlin, Nemo, Chip, whatever his name is this week) was being poisoned by an entire pack of wipes that Zion had decided he wanted to "clean" the fish with. Drama drama drama. I'm hoping the fish lives, but I'm not entirely hopeful (I'll update on that later).




After the fish drama, I made lunch. I decided I wanted eggs, bacon and avocado. The butter is what I used in the pan so the eggs don't stick. I've made an entry in MyFitnessPal for avocado so that it correctly reflects carbs since I eat them often. You'll have to do the same if you want the accurate net carb count. MyFitnessPal doesn't calculate off net carbs, just total. So, if you're keeping track, my net carb count for today so far is 10g (see how easy that is)...giving me 10-20g left for dinner/snacks/etc.

One trick I also use for myself is to use small plates. In my head, I think that if my food fills my plate, that's normal. Years of eating poorly will do that to you. Newsflash people...your plate doesn't have to be full, BUT if you're like me, you may want to consider getting some smaller plates yourself. It really does make a difference for me. And for the sake of honesty and really showing an accurate part of my day, I didn't eat all the avocado or eggs (not a huge egg lover).



After lunch, we had a little play time and worked on trying to learn our numbers (always a failure...mostly on my part because I am no teacher and I lack patience to the millionth degree). After that, Zion goes down for a nap and I have a teensy window of about an hour to 2hrs to ship packages from my business, clean, meal prep, meal plan, blog, look at FB, drink tea, etc. before he needs me again.

After his nap and my quiet time, he usually gets up wanting a snack. Being mom, I tend to eat a snack at that time too. Today I ate a cheese slice/block thing and a couple of spoons of Zion's yogurt. If you're counting, I'm up to 13g net carbs at this point.



Afternoon includes lots of playing, cleaning up our mess and then dinner prep!  Tonight we had Caprese Chicken Stuffed Peppers. Linked is the recipe I used as an outline, but below is what I actually did. The original recipe called for tomatoes, more chicken, more cheese, different items, etc. I adapted for just me, Nick and Griffin (Griffin won't eat the pepper so I just reserved his for him to eat by itself or on a tortilla since he's not keto 100%). I also used shredded rotisserie chicken since that's what I had on hand. Nutrition info is at the very bottom.








Today's Carb Count:
Breakfast - 9g net carb
Lunch - 1g net carb
Snack - 3.2g net carb
Dinner - 5g net carb

Total for the day: 18.2g





All in all, it was a good day for carbs for me!
