#7 - Egg Roll in a "Bowl" (such a stupid name)

Seriously though...who ever coined the phrase "Egg Roll in a Bowl"?? One of my friends said tonight that she feels so many things are labeled "in a bowl" and I really got to thinking about it and giggled to myself as I put my "Egg Roll in a Bowl" on my plate. I think it really should be called "Deconstructed Egg Roll Stir Fry" but whatevs. I saw several recipes and decided (much like everything else I do) to make it my own and change it all up. I must say...this. was. delicious. The thirteen year old did not love it so he had a brilliant (not) idea to put cheese on it and wrap in a tortilla. Let's just say he didn't enjoy it that way either! Husband loved it. The three year old doesn't eat anything normal people do so there's that.


I promise to add the nutrition info tomorrow but for now I'll just post the recipe!! Did I mention this takes like 15-20 minutes tops and is SUPER easy?? Well, now I did!! You're welcome!! This made about 8 servings (please don't ask me to do math and try to figure out how many cups that is per person...just divide evenly 8 times or make larger portions for less people or leftovers).


Ingredients:
1 - 16oz bag raw coleslaw mix
1lb ground turkey (some recipes said sausage but I used what I had and loved it)
2 tbsp sesame oil
1tsp ground ginger
2 tbsp minced garlic
1/4 cup low sodium soy sauce

 Directions:
1. Brown meat (whatever meat you decide to use - I also think this would be delicious with steak)
2. Add soy sauce, garlic, ginger, sesame oil and slaw
3. Stir fry until the cabbage is the texture you prefer.
4. Enjoy
