#4 - Keto Broccoli Cheddar Soup

Let's be honest...I don't normally enjoy broccoli cheddar soup. It isn't something I would normally pick to feed myself or my family. However, a dear friend of ours suggested we try it and raved that it was delicious. I found a couple of recipes and decided to pick and choose what I wanted to make what I thought would be a delicious soup. Turns out...I was right and not only is this soup delicious and filling, it is also husband approved (mine anyways).

Ignore the fact that I forgot to put the broccoli in the picture lol.





Ingredients
4 tbsp butter
2 oz cream cheese
1/2 cup heavy whipping cream
1 cup white onion
2 tbsp garlic
3 cups chicken broth (3 cups water, 2 chicken cubes boiled together)
1 head of broccoli chopped into bite size
8 slices of bacon (cooked & crumbled)
2 cups cheddar cheese
Salt
Pepper

Directions
1. Saute your onion/garlic/butter together
2. Add chicken broth and broccoli to your onion/garlic/butter mixture once onions are translucent
3. Cook until broccoli is tender. Add any seasonings you'd like.
4. Heat cream cheese around 30 seconds in microwave until soft.
5. Stir in cream cheese and heavy whipping cream into mixture. Bring to a boil.
6. Once combined thoroughly, remove from heat and stir in cheese until combined.
7. Stir in 3/4 of bacon (reserve 1/4 for topping)

Serve warm!

    1. I'd say that will vary depending how long you boil it, etc BUT I did 1.5 cup per serving and we will be right at 10 servings for the pot.
