#16 - Keto Sausage Zucchini Boats

This. Was. Delicious. I went by this recipe as an outline, but what I specifically did is below. BTW, I take TERRIBLE food pictures! lol Enjoy!!




Ingredients:
4 medium sized zucchini
1 lb ground sausage
4 tbsp minced garlic
1/2 a yellow onion chopped
1/2 tsp paprika
1/2 tsp garlic salt
pepper to tast
1 cup chicken broth
sprinkle of shredded cheese of choice to the tops


Directions:
1. Slice zucchini's length ways down the middle.
2. Core out centers of each half - reserve the middles & put halves into a glass baking dish.
3. Saute onion, garlic, spices and the middles of the zucchini together.
4. Once zucchini has cooked softer, add in the sausage and cook until sausage is no longer red.
5. Spoon sausage mixture into the centers of the halves you placed in the glass dish.
6. Sprinkle with cheese of choice (or no cheese if that's what you prefer).
7. Pour chicken broth into bottom of dish.
8. Cook at 350 for 30 minutes.
