Cheesy Italian Chicken Stuffed Peppers
Ingredients
2 cups shredded chicken
2 tbsp olive oil
1 tsp Italian seasoning
1 cup mozzarella shredded
3 oz cream cheese
1/2 cup parmesan cheese shredded
1 tsp basil
1 tbsp minced garlic
1 bell pepper, halved (seeds removed)
1 cup chicken broth
balsamic glaze for drizzling
salt
pepper
Directions
1. Preheat oven to 350.
2. Cook chicken till done w/olive oil.
3. Add italian seasoning, basil, garlic, cream cheese, mozzarella and parmesan.
4. Combine until thoroughly mixed.
5. Divide mixture between peppers.
6. Add chicken broth to glass dish that you’re cooking the peppers in.
7. Cover with foil (I did NOT cover with foil because we are out of foil…whoops...that's why mine was brown)
8. Cook for 35 minutes until peppers are tender"ish".
Add salt and pepper to taste.
